Will it taste different?
Most of the Italian breads out there have a bit different applications, such as the Focaccia bread which is just eaten freshly eaten for breakfast , lunch and dinner which cannot be said for normal sandwich bread which we use for making french toast.
Even though the Italian bread are not meant for making french toast in the books , there is no problem to try out french toast out of italian bread. Italian breads are widely known for their softness and their ability to be highly absorbent which makes them perfect to absorb all the flavours of the sweet egg mixture.
I like to make my french toast with 'Ciabatta' , which is one of the most common and top 5 italian breads. Make sure you add thick slices instead of the whole bread into the egg mixture to make sure the porous centre of the Ciabatta absorbs all the seasoning and flavours of the egg mixture.
The French toast made with italian bread won't taste much different than what you make with regular bread.

The thing what I like about french toasts is that there is no perfect way of eating it , everyone can have their own preferences.
Best italian breads for making french toasts
1. Ciabatta
2. Focaccia
3. Certocino
Note: Certocino is a sweet bread made with all kinds of dryfruits , be sure to leave out the dryfruits and all the things which add extra sweetness if you are going make a french toast.
Originally , italian breads were to be eaten with other foods such as meat , cheese , soup etc unlike normal breads. But there is nothing wrong in trying to make french toast with one.
As mentioned I've had french toast made with Ciabatta multiple times with my friends for breakfasts , lunch and even for dinner at times.
The only different thing you would observe in the French toast is it's texture.
Making any kind of fresh italian bread takes 1.5hr on average , so if you are in any kind hurry and need to grab a delicious french toast for breakfast than using italian bread won't be a good idea. In that case getting ready made breads.
Personal recommendation:
Of all the Italian breads , I would recommend Ciabatta bread as it is common and easily available and top of that simple and delicious for making french toast. If you are making the bread at home than be sure to make the dough with a stand mixture because of 80 % hydration which is very very sticky and wet.
